Nishijima Roshi was referring to the fact that, in Japan, Korea and some other places, traditionally a new born baby is born as "1 year old" at birth, and then a year is added with the Chinese (old lunar calendar) new year. (This way of counting is no longer followed in Japan, although it is in Korea).

So, a baby born just a day, on the eve of the new year, would be "2" the next day!
This way of counting is of China origin, although not so common there now:

Of course, just as Zazen is the same for a 16 year old beginner or a (then) 86 year old Roshi, 1 year old or 100 years old or 1000 x 1000 years old is all the same.
